mint quinoa salad


• 2 cups vegetable broth or lightly salted water

• 1 cup dry quinoa

• 6 green onions, chopped

• 3 celery stalks, sliced

• ¼ cup toasted pumpkin seeds

• ¼ cup fresh chives, snipped

• ¼ cup fresh mint, chopped

• Juice of 1 lime

• 2 T extra virgin olive oil

• ¼ cup goji berries or dried cranberries (reduced sugar)


1. Cook quinoa according to package instructions.

2. Transfer the quinoa to a bowl. Once cooled, add green onions, celery, pumpkin seeds, chives, mint, and goji berries or cranberries. Toss to mix. Whisk together the lime juice and oil and drizzle over salad and toss.
