avocado veggie wrap


Ingredients (Makes 2)

  • 2 wraps made with 100% whole grains

  • 1 avocado, mashed with a fork 

  • 1 - 2 carrots, peeled and grated

  • 1/2 cucumber, grated

  • Sea salt and pepper 

  • Freshly-squeezed lemon juice


1. Mash avocado in  a bowl with a squeeze of lemon juice, sea salt, and pepper. 

2. Spread avocado across wrap. Add vegetables and roll up. 

Feel free to add sprouts, beans, and/or any other raw or roasted veggies of your choice!
