mango & black bean Quinoa Salad

Ingredients

 

• 1 cup quinoa

• 1 mango, peeled and sliced into cubes

• 1 red bell pepper, chopped julienne-style

• 1 cup organic black beans, rinsed thoroughly

• 4 - 5 fresh mint leaves, chopped

• 2 limes

• 4 shallots, chopped

• 1 jalapeño pepper, chopped

• 1 teaspoon cumin seeds

• Fine sea salt & pepper, to taste

• 4 tablespoons extra virgin olive oil

Instructions

​

1. Cook quinoa according to package instructions.

2. For dressing, combine olive oil, juice of both limes, and cumin seeds. Add salt and pepper to taste. Stir together.

3. Combine dressing with other ingredients of salad and garnish with fresh mint.
