oat granola muffins

Ingredients (Makes 12)

• 1 1/2 cups quick-cooking rolled oats (make sure it says 'gluten-free' on package!)

• 1/2 cup almond flour

• 1/4 cup ground flax seeds

• 1/4 cup dried cranberries

• 1/4 cup dried apricots, chopped

• 1/4 cup dried pecans or walnuts, chopped

• 1/4 cup sunflower seeds

• Grated zest of 2 oranges

• 1 teaspoon cinnamon

• 1/2 teaspoon ground ginger

• 1 large egg (or 2 egg whites if you'd like)

• 1/3 cup maple syrup

• 1/4 cup coconut oil, melted

• 1 teaspoon pure vanilla extract

Instructions

1. Line muffin tray with papers and preheat oven to 350ºF.

2. Mix all ingredients together in large bowl with spoon.

3. Divide into portions of 12. Bake for about 12 minutes or until golden brown at edges!
