Tabbouleh-style salad with bulgur

Ingredients

• 1/2 cup uncooked bulgur

• 1.5 cups diced plum tomato

• 3/4 cup minced fresh parsley

• 1/2 cup finely chopped red bell pepper

• 1/2 cup diced cucumber

• 1/4 cup diced mint

• 1.5 T fresh lemon juice

• 1 T olive oil

• 1/2 t. salt

• 1/4 t. pepper

Instructions

Cook bulgur, drain, and toss all the ingredients together! Play around with the ingredients for the dressing... Add more lemon if you like that better, less garlic, etc. That's what makes cooking fun!
